Aged to perfection, at six months this cheese is hitting all the right notes for a Gouda made from cow’s milk in Central Switzerland. The cheese is made exclusively by Emmi cheesemakers in Emmen where it is ripened for three months before refinement in the Kaltbach Cave for the final three months. While in the cave, the cheese is smeared with a salt water brine and absorbs all the cave minerality and flora from the other cheeses. The result is a dark brown rustic rind, pale yellow paste, and a rich flavor of nutty caramel with a slight pear finish.
Pair with a floral dark honey or peach jam. Grate into a pear and arugula salad. Serve with tannic, mineral-rich cider, barrel-aged gin or smoky tea such as Lapsang or Russian Caravan.
