While this cheese may look like a classic chèvre, this fresh, young cheese is actually made from Lacaune sheep’s milk. Produced in Jumilla (Murcia), Spain, Wooly Wooly® is rich, sweet and mildly sheepy with a touch of tang. After 10 days of aging, this ewe’s milk cheese is rolled into a blanket of crushed pepper, including white, black, green, red and allspice to give it a wonderful aroma and texture. The combination of different types of peppercorns brings a varied range of flavors and intensities to the cheese. White peppercorns have a milder flavor compared to black or green peppercorns. They offer a subtle, earthy taste that is less pungent and more delicate. Green peppercorns tend to be milder than black, with a slightly fruity taste. Black peppercorns offer a classic pungent and robust flavor, while red peppercorns provide a subtle sweetness. Allspice, also known as Jamaica pepper, is a spice that combines flavors reminiscent of cinnamon, cloves, and nutmeg. When combined with the peppercorn mix, it creates a unique fusion of sweet, warm, and slightly spicy notes. The luscious, creamy texture and bold coating lends a note of freshness to any cheese board.
