In the idyllic village of Combremont-le-Petit in Western Switzerland, at 665 meters above sea level, Cheese Maker Michael Hanke has created a distinctive blue cheese celebrated for its indulgent creaminess and captivating flavor spectrum. Collaborating with Michael’s innovative expertise, Gourmino proudly birthed this singular blue cheese.
Bleu de Combremont springs forth from cow’s milk meticulously chosen to meet the exacting standards of Gruyère quality, albeit handled with a unique touch. Thanks to the infusion of blue mold cultures, the cheeses embark on a direct journey from the salt brine to an adjacent cellar. Here, they mature and flourish under the vigilant guidance of stringent climatic and microflora conditions. Within this sanctuary, its exquisite taste unfurls, and its incomparable visual allure takes shape. Its distinctive form has already christened it the affectionate moniker of “Cinder Block Blue.”
