Amadeus is a classic representation of traditional Austrian cheeses. Also known as Chorherrenkäse or Prälatenkäse, Shardinger Amadeus is a monastery-style cheese. The milk comes from the alpine pastures of Salzburg and is made in Voitsberg in Styria according to traditional recipes. After eight weeks of storage on spruce boards, Amadeus develops into a delicate, balanced semi-firm cheese with many tiny eyes and a springy texture. This cheese is loved by young and old for its mild, milky, pleasantly refreshing lactic finish which rounds out a mild fruity flavor. Perfect for traditional cheese dishes such as soups, sauces and gratins, this is also a great addition to any cheese platter.
