The literal translation of this cheese’s name is a simple one – in the dialect of Alta Val Brembana (the production area of Formai de Mut) formai means cheese and mut means mountain. This rare “mountain cheese” is referred to as “a small masterpiece of the Alpine cheese-making art” by the Italian Government’s Ministry of Agriculture. All Formai de Mut is manufactured from Alpine milk, taken from cows that graze at altitudes higher than 1,200 meters above sea level. Formai de Mut is made from unpasteurized milk and is aged for over 6 months. Its flavor is subtle yet distinctive, retaining the fragrance of the herbs of Val Brembana.
